Both the tomato and cucumber salad are my mother-in-laws go-to’s for just about every dinner, and they’re my favourite! They’re perfect for an easy meal at home, or as a side when hosting a dinner party, but the best part about both salads is that my toddler will eat them too #WINNING!

Tomato Salad

Course: Side
Ingredients
– 6+ Romano tomatoes
– 3-4 fresh basil leaves, rolled and roughly chopped
– 1/4 – 1/2 red onion, thinly sliced
– 4 tbsp extra virgin olive oil (enough to coat the tomatoes)
– 2 generous pinches of sea salt
– Fresh hot peppers, to taste (optional)
Instructions
- Chop tomatoes and put them into a bowl
- Add olive oil and salt to bowl, mix well
- Chop the basil roughly and mix into the salad
- Slice onions and add them into the bowl
- Add hot peppers to taste (optional)
*Ensure you always taste and season more, or less, according to your liking

Cucumber Salad

Course: Side
Ingredients
– 1 large English cucumber, peeled and cut into slices
– 4 tbsp extra virgin olive oil (enough to coat the cucumbers)
– 1 teaspoon of garlic powder
– 2 tablespoons of white balsamic vinegar
– 2 generous pinches of sea salt
– Pinch of dried oregano
Instructions
- Slice cucumbers and put them into a bowl
- Add salt, garlic powder, dried oregano, and white balsamic vinegar
- Mix, and let sit for a few minutes before serving
